Campbell's Has Some Competition!

Welcome back to Tasteful Thoughts! With the cooler temperatures here in Michigan, our hearts have been calling for a nice warm-me-up dish, and what better to fulfill that desire than a nice steaming bowl of soup!

Auguste Escoffier once said that, “Soup puts the heart at ease, calms down the violence of hunger, eliminates the tension of the day, and awakens and refines the appetite”, and you know something.. WE COULDN’T AGREE MORE!

So on today’s episode of Tasteful Thoughts, we are going to share with you four of our most delicious soup recipes to warm up your house (and make it smell delightful, too)!

  • Vegetable Chicken Noodle Soup - a classic!
    1 cup chopped celery
    1 cup chopped carrot
    1/2 cup of thinly sliced leek (white part only)
    1/2 cup chopped turnip
    6 cups reduced-sodium chicken broth
    1 tablespoon minced parsley, fresh
    1/2 tablespoon thyme, dried
    1/2 tablespoon rosemary, dried
    1 teaspoon balsamic vinegar
    1/4 teaspoon ground black pepper
    2 ounces wide noodles (yolk-free is best), uncooked
    1 cup diced chicken, cooked

    Directions:
    Place celery, leek, carrot, turnip and 1/3 chicken broth in large saucepan. Cover and cook over medium heat, stirring occasionally, until vegetables are tender. Stir in remaining chicken broth, parsley, thyme, rosemary, balsamic vinegar, and pepper. Bring to a boil, then add noodles. Cook until noodles are tender, and stir in chicken. Reduce heat to medium. Simmer until heated thoroughly. Makes approximately 6 servings.

  • Vegetarian Chili - yummmmy!
    1 tablespoon coconut oil
    2 cloves garlic, finely chopped
    1 1/2 cups mushrooms, thinly sliced
    2/3 cup red onion, chopped
    2/3 cup red bell pepper, chopped
    2 teaspoons chili powder
    1/4 teaspoon ground cumin
    1/8 teaspoon ground red pepper
    1/8 teaspoon oregano leaves, dried
    1 can peeled whole tomatoes, undrained (28 ounces)
    2/3 cup baby lima beans, frozen
    1/2 cup canned Great Northern beans, rinsed and drained
    2 tablespoons sour cream
    2 tablespoons cheddar cheese, shredded

    Directions:
    Heat coconut oil in large nonstick saucepan over medium-high heat until hot. Add garlic. Cook and stir for 3 minutes. Add mushrooms, onion and bell pepper. Cook for 5 minutes, stirring occasionally. Add chili powder, cumin, red pepper, and oregano. Cook and stir for 1 minute. Reduce heat to medium-low, and then add tomatoes and beans. Simmer for 10-15 minutes, stirring occasionally. Top with sour cream and cheese. Makes approximately 4 servings.

  • Southwest Corn and Turkey Soup - a spicy favorite!
    1 tablespoon coconut oil
    3 dried ancho chilies
    2 small zucchini
    1 medium onion, thinly sliced
    3 cloves garlic, minced
    1 teaspoon ground cumin
    3 cans reduced-sodium chicken broth (14 ounces each)
    8-12 ounces cooked dark turkey meat, shredded
    1 can chick peas, rinsed and drained (15 ounces)
    1 can black beans, rinsed and drained (15 ounces)
    1 package corn, frozen (10 ounces)
    1 teaspoon oregano leaves, dried
    1/3 cup cilantro, chopped

    Directions:
    Cut stems from chilies and shake out seeds. Place chilies in a medium bowl and cover with boiling water. Let stand for 30-40 minutes until chilies are soft, then drain. Cut open (lengthwise) and lay flat on work surface. With the edge of your knife, scrape the chili pulp from the skin and finely mince. Set aside. Cut zucchini in half (lengthwise), and slice crosswise into 1/2-wide pieces. Set aside. In a large saucepan, heat coconut oil over medium heat. Add onion and cook covered for 3-4 minutes, stirring several times. Add garlic and cumin, cooking it for 30 seconds until fragrant. Add chicken broth, chili pulp, zucchini, turkey, chick-peas, black beans, corn and oregano. Bring to a boil on high heat. After boiling, reduce heat to low and simmer for 15 minutes, or until the zucchini is tender. Stir in cilantro and serve. Makes approximately 6 servings.

  • Double Corn and Cheddar Chowder - a hearty selection!
    1 tablespoon butter or margarine
    1 cup white onion, chopped
    2 tablespoons all-purpose flour
    2 1/2 cups reduced-sodium chicken broth
    1 can cream-style corn (10 ounces)
    1 cup frozen corn
    1/2 cup red bell pepper, finely diced
    1/2 teaspoon hot pepper sauce
    3/4 cup sharp cheddar cheese, shredded (3 ounces)
    1/2 tablespoon freshly ground black pepper

    Directions:
    Melt butter or margarine in a large saucepan over medium heat. Add onion and cook for 5 minutes. Sprinkle onion with flour. Cook and stir for 1 minute. Add chicken broth, and bring to a boil, stirring frequently. Add cream-style corn, corn kernels, bell pepper and pepper sauce. Bring to a simmer and cover for 15 minutes. Remove from heat and gradually stir in cheese until melted. Sprinkle with black pepper and serve. Makes approximately 6 servings.
    **For a little extra substance, add in 1 cup brown or white rice, cooked.

Welcome back to Tasteful Thoughts! We love Wednesdays specifically because we get to provide you with some of our most favorite trade secrets, recipes, ideas, etc.

On today’s session of Tasteful Thoughts, we thought we would share something a little abstract (as it has very little to do with food), but valuable and potentially fitting nonetheless! Today, we talk about the Longacre House!

Welcome back to Tasteful Thoughts!

With the holiday season fast approaching, we thought we would share with you today a few different cocktail recipes to spice up your next holiday gathering! After all, what’s a party without a little alcohol involved?

Below are some of our favorite holiday-inspired adult beverages. Of course, these can be modified in anyway you please, but here are a few ideas to get you started:

  1. Candy Cane Martini - You will need:
    1 lemon, sliced, to use for rimming your martini glass (optional)
    1 candy cane, crushed, to use for rimming your martini glass (optional)
    2 ounces of strawberry Vodka
    4 dashes of White Creme de Menthe
    2.5 ounces of cranberry juice
    Handful of ice cubes

    Use a slice of lemon to rim the top of your martini glass, and then place over the crushed candy cane until the rim of your glass is covered. Pour all ingredients over ice in a cocktail shaker cup, and drain into your candy cane rimmed martini glass. Enjoy!

  2. The Grinch - You will need:
    3 ounces of Peach Schnapps
    3 ounces of Bacardi 151 Rum
    12 ounces of orange juice
    4 ounces of Sprite
    3 ounces of Blue Curacao Liqueur
    Handful of ice cubes
    1 pack of candy canes, for garnish (optional)
    1 jar of cherries, for garnish (optional)

    Place a handful of ice in a glass, and begin pouring your ingredients in. Use the candy cane (or a spoon/straw) to stir, and watch the green color magically appear! Top with a cherry or two, and drink up!

  3. Jingle Jangle Punch - Your will need:
    1.5 cups of berry Vodka
    3/4 cups Grand Marnier
    6 pints of fresh berries (raspberries, blackberries, and strawberries)
    1 cup lemon juice (freshly squeezed - about 8 lemons)
    1.5 cups simple syrup
    1 bottle of sparkling wine (something extra dry)
    Handful of ice

    Mix all ingredients (aside from the fresh berries) in a cocktail shaker cup, and pour over ice in a wine glass. Top with a few fresh berries, and sip away!

  4. Merry Margaritas - You will need:
    1 lime, sliced, for rimming your glass (optional)
    Margarita salt, for rimming your glass (optional)
    1 package of cranberries, for garnish (optional)
    1.5 cups of cranberry cocktail juice
    3/4 cup of fresh lime juice (freshly squeezed - about 6 limes)
    3/4 cup of Tequila (silver or gold - whichever you prefer)
    1/2 cup Triple Sec
    Handful of ice cubes

    Rim your glass with a slice of lime, and then cover in margarita salt (again, this is optional). Pour all ingredients over ice in a cocktail shaker cup, and drain into rimmed glass. Top with a couple of cranberries, and if you wish, throw a few ice cubes into it to keep it chilled; you know, if you’re just going to sip it..

  5. White Christmas Sangria - You will need:
    1 Granny Smith apple (cut into cubes)
    1 Gala apple (cut into cubes)
    1 cup of fresh cranberries
    1 large Rosemary sprig
    1 bottle of Pinot Grigio
    1/2 cup of white grape juice
    1/4 cup of sugar
    1 can of club soda

    Place the apples, cranberries, and rosemary sprig in a large pitcher. Pour the Pinot Grigio, white grape juice, sugar, and club soda over top, and stir. Let sit in the fridge for at least an hour, then drink, drink, drink!

  6. The Poinsettia - You will need:
    Orange Zest strips, for garnish (optional)
    1/4 cup of Vodka
    1/4 cup of Champagne
    1/2 cup of cranberry juice
    Handful of ice cubes, crushed

    Mix all ingredients, and pour into your cup filled with crushed ice. Add a strip or two of the orange zest, for good measure, then say goodbye to remembering the rest of your evening… if you know what we mean.

  7. Spicy Gingerbread Man - You will need:
    Cinnamon sticks, for garnish (optional)
    1 ounce of Vanilla Vodka
    1 ounce of Hazelnut Liqueur
    1/2 ounce of Butterscotch Schnapps
    2 ounces of Ginger Beer
    Handful of ice

    Pour all ingredients over ice in a cocktail shaker cup, and drain into a glass of your choosing. Add a cinnamon stick for a little kick, and drink up!

  8. Kahlua Hot Chocolate - You will need:
    2 tablespoons of sugar
    1.5 tablespoons of cocoa powder
    1/4 teaspoons of cinnamon
    Pinch of nutmeg
    **These ingredients make the hot chocolate mix; you can, if you wish, buy pre-made hot chocolate.
    2 cups of milk
    1 ounce of Kahlua coffee liqueur
    Mini marshmallows, for garnish (optional)
    Salted caramel, for garnish (optional)
    Chocolate syrup, for garnish (optional)

    If you are making your own hot chocolate mix, then mix the first four ingredients listed; if not, then move on to ingredient five. Mix the hot chocolate powder, milk, and Kahlua until the hot chocolate powder is dissolved. Warm it up in an urn, or the microwave, and pour into a coffee mug. Top with mini marshmallows, chocolate syrup, and salted caramel. The perfect “warm-me-up” beverage!

  9. The Blizzard - You will need:
    4.5 tablespoons of Bourbon
    1.5 tablespoons of cranberry juice
    1 tablespoon of lemon juice
    2 tablespoons simple syrup
    1 pack of cranberries, for garnish (optional)
    Handful of ice

    Pour all ingredients in a cocktail shaker cup filled with ice, and then drain over ice into a rocks glass. Add a cranberry or two to get into the festive spirit, and enjoy!

  10. White Cranberry Mimosa - You will need:
    1 package of frozen cranberries
    Equal parts Prosecco and White Cranberry Juice

    This one is super easy, but equally as refreshing! Fill your wine glass with half Prosecco and half white cranberry juice, and toss a few frozen cranberries in there to keep it chilled. Sip away!
